Recently, Tim’s Chrome Bar (4736 Gravois), located in the Bevo Mill area, introduced a uniquely entertaining brunch experience. Owner Pat Schuchard aimed to design a brunch menu that reflects the vibrant art and décor of the bar, available from Wednesday to Sunday, 8:30 a.m. to 1:30 p.m.

“Tim’s was designed as a thoughtfully curated space,” Schuchard explains. “Our food, all made from scratch, enhances the quality of our menu.”

Chef de cuisine Scott Carruthers, also the general manager at the nearby Das Bevo, collaborated with Anne Schuchard, managing director of Schuchard Projects, to create a menu filled with whimsical puns.

For example, the Shell Y Benny is a creative take on eggs Benedict featuring an English muffin, eggs, and fresh crab, topped with micro greens, Hollandaise sauce, green onions, and chili threads.

The Cluckin’ Waffle includes sriracha maple-glazed chicken breast paired with sweet or plain waffles.

The La Vida Loca starts with a base of house-made tricolored potatoes that are boiled, smashed, and fried, layered with house sour cream, diced green onions, spicy mayo, and chili threads for a sweet, smoky kick. It’s elevated with spicy Polish sausage bits, spicy sour cream, jalapeño slices, mixed greens, and Uncle Jay’s salsa, all topped with microgreens and your choice of eggs.

Breakfast sandwiches utilize Union Loafers bagels, and there are also classic bacon and egg plates, French toasts, quesadillas, and a breakfast smashburger featuring an Impossible patty.
